Course Description

This course is a 1 year intensive practical and theory study. prepares students to work in professional kitchen globally. The course description consists of commercial cookery, Baking and Pastry Productions, food safety, product knowledge, culinary fundamentals, nutrition, and professionalism. Other courses and topics covered include entrepreneurship, Kitchen and Restaurant Management, customer service, writing and menu developing, cost control, wine and cheese appreciation. Students learn how to run both front-of-the-house and back-of-the-house operations.

Students may study for an advanced diploma in culinary arts to learn and develop their skills in culinary methods and understand the global cuisines that influence and affect the industry. They have an optional choices of specialization to address the demand of the job globally. They gain hands-on experience and training as well as industry knowledge and managerial skills.

Graduates of culinary baking and pastry arts programs may find work in the hotel, restaurant, and hospitality industries. In hotel and restaurant kitchens, they may become Chefs and achieve the highest position in the kitchen which is the Executive Chef or Restaurant owners. Outside the kitchen, there are opportunities as food and beverage managers, or as restaurant or hotel chain executives. They may also seek higher-level positions as restaurant or business owners, or senior managers. Related careers include food writer, research chef, culinary educators, or even media personalities.

The course has 3 options for specialization either the Cruise line operation, Master Chef de Cuisines or Master Chef Patissier. For Cruise Line Operation students will experience to be onboard and have exposure and familiarization and actual experience local and international. And for Master Chef de Cuisine students will experience actual hands on class for Authentic Asian Cuisine here and abroad.
